Orange Muffins - General Cooking Principles

The zest provides a special aroma of orange pastries. A thin, colored peel of citrus is ground and added to the dough along with other ingredients. But the pulp and fruit juice can also be used, it all depends on the recipe.

What else is added to the dough:

• eggs;

• butter;

• milk products;

• sugar;

• flour.

Finished dough is laid out in small tins. Cups are filled to half or 2/3. Muffins are usually baked in the oven. Since the products are small, the temperature is set from 170 to 190 degrees.

Orange muffins in oil

The recipe for the simplest orange muffins. The basis of the test is butter, you can use high-quality margarine, but with a fat content of at least 72%.

Ingredients

• 150 g of sugar;

• large orange;

• 150 g of oil;

• three eggs;

• 8 g of conventional cultivator;

• flour will need from 200 to 250 grams.

Cooking

1. From washed citrus, remove the whole thin zest, grind it in any way. Cut the orange itself, squeeze out the whole juice. Grown bones must be removed immediately, the flesh is allowed. For the test you need 50-70 ml of juice, which is why the approximate amount of flour is indicated.

2. We soften the oil. Rub with prescription sugar. You can beat with a mixer to get faster.

3. Enter one egg at a time, immediately thoroughly rub.

4. Next, add orange juice, first drop by drop, then pour the whole. We do not rush so that the oil does not exfoliate.

5. The zest, which was previously crushed, must be combined with flour (while 200 g is sufficient) and a conventional cultivator.

6. Pour flour into the dough, stir. If the mass turns out to be liquidish, then we add more flour. We achieve the consistency of thick sour cream in which the spoon should stand.

7. Put the orange dough in the molds.

8. We serve baked muffins. If the molds are standard size, half an hour at 180 ° C is enough.

Orange Shockotime Muffins

A recipe for stunning oranges chocolate dough muffins. To make baking, you will need orange zest and a little juice. Chunks of chocolate are present in the muffins, but they are optional and can be excluded if necessary.

Ingredients

• a glass of sugar;

• 45 g of cocoa;

• 50 g of melted chocolate;

• 50 g of chocolate pieces;

• 250 ml cream;

• 1 tbsp. l grated zest;

• 2 tablespoons of orange juice;

• flour 1.75 cups (1 ¾);

• 2 eggs;

• oil 50 grams;

• cultivator 8 grams.

You can add a little orange liquor or essence.

Cooking

1. Melted chocolate, which is 50 g according to the recipe, is mixed with cream, eggs, and orange juice.

2. Melt the butter, cool, add to the creamy mixture.

3. Separately combine the zest with flour, throw the chocolate chopped into pieces, add sugar and cocoa with baking powder to them. Stir thoroughly.

4. Combine both mixtures together, stir the dough. We add essence or a little liquor to taste, the aroma will be richer.

5. Throw the dough into molds.

6. Immediately put the future muffins in the oven.

7. At 180 degrees, miniature muffins will be baked for 22-25 minutes. We check the readiness with a wooden torch (toothpick).

Orange muffins "Slice" on sour cream with condensed milk

A feature of these muffins is not only the most delicate dough on sour cream, but also a fragrant orange slice inside each product.

Ingredients

• 100 g of fat sour cream;

• 120 g of white condensed milk;

• large orange;

• 150 g flour;

• two eggs;

• 0.5 tsp drinking soda (extinguish).

Cooking

1. Remove the zest from a thoroughly washed orange, and send it to the flour.

2. Peel the citrus, cut the half into small slices, you need 12-14 pieces by the number of muffins.

3. The second part of the orange pulp is twisted in a blender or chopped very finely.

4. Beat eggs with condensed milk and fat sour cream, add flour, quench soda and pour into the dough.

5. Put the chopped oranges, stir.

6. Put in the molds of a silent orange dough, about a centimeter.

7. Scatter slices of citrus prepared earlier.

9. We bake muffins with slices for about 20 minutes at 180 degrees, if necessary, increase the time.

Chocolate and Nut Orange Muffins

A recipe for gorgeous orange muffins for which you need walnuts. Chocolate dough based on milk with butter. Sugar for this recipe is better to use brown, but you can take ordinary white sand.

Ingredients

• 2 eggs;

• 2 tsp orange peel;

• walnuts 100 g;

• 60 g of cocoa;

• flour 0.25 kg;

• 100 g sugar;

• 230 ml of milk;

• 1 orange;

• 110 g of oil;

• 6 g of ripper.

Cooking

1. Pour sugar, flour and a cultivator into a dry bowl, add cocoa with zest. Throw a pinch of extra fine salt. The dry mass is thoroughly mixed until smooth.

2. Cut the nuts into pieces, add to the dry mixture.

3. The eggs are mixed with milk, it is convenient to use a whisk, we bring the mixture to uniformity.

4. Pour the melted butter into the dough, mix.

5. Combine all liquid and dry ingredients, mix, the dough will turn out a little thick for muffins.

6. Cut the orange in half, squeeze the juice from one part, and send it to the total mass. Stir again.

7. Put the dough in molds, put the fragrant muffins to bake. At 170 degrees, the products reach readiness in 40 minutes.

Kefir Orange Muffins with Chocolate Filling

A variant of simple orange muffins, the dough is prepared on ordinary kefir. In this case, the products are lush and high. Chocolate is used as a filling. You can take a white, dairy or dark product. Add it a lot is not necessary.

Ingredients

• kefir will need 1 cup;

• 3 tablespoons of sugar;

• 0.5 oranges;

• 2 eggs;

• 10 g of ripper;

• 1 tsp grated zest;

• 1.5 tbsp. flour;

• 30 ml of oil;

• 12 pieces of chocolate;

• a pinch of salt.

Cooking

1. Cut the orange very finely, pour into a bowl. Juice, which will be formed in the process, is also poured into a bowl.

2. We combine kefir with eggs, shake, add butter and sugar. If you like muffins sweeter, then you can pour a couple more spoons.

3. Add chopped oranges to the dough.

4. Combine all the remaining dry ingredients, transfer to bulk, mix the dough, do not forget to add chopped zest.

5. We lay out the dough in tins. Get about 12 cupcakes.

6. In each stick a piece of chocolate, deepen so that the filling drowned and disappeared from view.

7. Put the kefir muffins to bake. The oven should already be warmed up to 190 degrees, we bring products with the filling to readiness.

Orange muffins in vegetable oil

Most often, the dough for muffins is kneaded in butter or without extra fat. But actually you can use vegetable oil. Baking with it turns out to be very tender, light, such products do not stale for a long time and remain soft.

Ingredients

• half a glass of sugar;

• two glasses of flour;

• a third glass of oil;

• one egg;

• half a glass of orange juice;

• 1 tsp zest;

• 2 tsp baking powder.

Cooking

1. Beat a single egg with orange juice, add vegetable oil and granulated sugar to them, mix, remove to the side.

2. Sift two prescription glasses of flour, add a cultivator to it, pour the grated zest. You can take dried skins and juice from the bag for this recipe, it doesn’t matter here.

3. Combine all the ingredients of the dough into a single mixture. Stir until smooth.

4. We lay out in small forms.

5. Send the dough for baking. Cooking muffins will take 25 minutes at 170-180. After baking, let the muffins cool down a bit, then remove them from the molds.

Orange muffins with poppy seeds

For these fragrant muffins, the dough is cooked in butter and cream, but you can also take sour cream. If there is not enough poppy, then boldly reduce the number or replace part with chopped nuts, sesame seeds. In any supplement, it will turn out very tasty and unusual.

Ingredients

• 0.5 packs of softened oil;

• 0.25 kg of flour;

• 3 eggs;

• 1 tsp cultivator;

• 2 tablespoons of fat cream (sour cream);

• 90 g of sugar;

• 1 orange;

• 4 tablespoons of poppy seeds;

• vanilla, salt.

Cooking

1. Beat cream with eggs and granulated sugar until smooth. The mixture is salt.

2. Add softened butter to the eggs. If this is not the case, then you can melt and cool, everything will work out as well.

3. Squeeze the juice from one orange, pour into the dough.

4. Mix the poppy with flour. Add the ripper and grated zest to this mass.

5. Combine all the ingredients together. For a wealth of taste, you can sprinkle a little vanilla. Interestingly obtained with ground cinnamon.

6. We spread the poppy dough in prepared molds.

7. We put the products on baking, prepare citrus muffins for about 17-20 minutes at 180 degrees.

Orange Muffins - Tips & Tricks

• The orange zest for baking can be dried for future use. This is especially convenient to do during the winter holidays, when a lot of citruses appear in the house.

• If there are a lot of muffins, it is better to freeze them immediately. Just remember to cool the products and pack them tightly so that they do not absorb extraneous odors from the freezer.

• Ordinary cupcakes (muffins) are easy to turn into charming cupcakes. It is only necessary to decorate the products with a cream cap, berries, cover with sugar mastic.
