Pies are the simplest pastries that can be treated to an unexpected guest or served with any tea party. Sweet, meat, curd, apple, airy or crumbly quick mayonnaise cakes are always popular. Their advantage is the speed of preparation and the minimum set of products that sometimes do not need to go to the store - they are always in the house.

You don’t have too much time to be in the kitchen for a long time, did your friends or relatives suddenly call to inform you about your visit, or just want something tasty for tea? A selection of recipes for quick pies on mayonnaise is just for such cases.

General principles for making mayonnaise pies

• Dough for quick pies can be steep or rare, like thick sour cream. For some types of such baking, crumbs are prepared with mayonnaise, not dough. The main feature is that all components are simple and do not require long preparation, and the dough is kneaded literally in a matter of minutes. The total cooking time, along with baking, is no more than an hour, less often - one and a half.

• Quick pies can be baked with any filling. It can be meat, cottage cheese, mushrooms, chicken, apples, jam or thick jam. There are recipes without filling, with sour cream. For each type of cake, the dough is kneaded according to its recipe, and only strict adherence to the recommended proportions and sequence of actions can guarantee a successful result.

• There are only a few general rules for making such pies. A prerequisite - sifting flour! This not only enriches it with air, but also allows you to remove accidentally litter. Butter and margarine should be of high quality and odorless. Eggs of only the first freshness, if taken, lay them in a separate bowl, and only then mix with the rest of the dough.

• Lubricate the mold or pan before filling with vegetable or butter. For baking some types of pies, the oil layer is additionally sprinkled with flour, white breading or semolina.

• All pies are baked at the same temperature - 180 degrees, and placed only in a preheated oven. If baking requires a different temperature, this is always specified by recipe. Baking time depends on the type of dough and the filling. Cooking a pie in the oven can take from twenty-five minutes to half an hour, in rare cases 40 minutes.

Mushroom mayonnaise pie

Ingredients:

• 3 large spoons of mayonnaise;

• wheat flour - 250 gr.;

• oily, 20% sour cream - three spoons;

• four large eggs;

• 100 gr. fresh cheese, variety "Russian";

• tablespoon of 9% vinegar;

• 6 grams of soda.

To the filling:

• 250 gr. pork pulp (neck);

• onion head;

• 200 gr. small champignons;

• refined oil - 50 milliliters.

Cooking method:

1. Remove mayonnaise, sour cream and eggs from the refrigerator in advance, they need to stand in the heat for at least one and a half hours.

2. While the products are warming up, we proceed to the filling. We grind the pulp with a meat grinder, tuned for minimal grinding. Finely chop the onion, chop the mushrooms medium-sized, with straws or slices.

3. In the heated oil, dip the onion and fry it until transparent, stirring systematically so as not to burn. Add mushrooms to the softened onion, continue cooking until all the moisture released from them evaporates. We bring the mushrooms to lightly brown, spread the minced meat to them. Add ground pepper, salt and fry everything together, crushing lumps of stray meat, 7-8 minutes. Put the finished filling in a bowl to cool.

4. Cooking the dough. Pour the eggs into a bowl, shake it slightly with a whisk. Having achieved homogeneity, we grate the cheese coarsely to the eggs. Add sour cream with mayonnaise, pour out pre-sifted flour, mix until smooth. In a small glass or cup, we extinguish soda with vinegar. Having waited for the end of the reaction — violent hissing and foaming, pour the mixture into the dough and carefully mix it. We give a quarter of an hour for exposure.

5. Moisten the bottom and side surfaces of a deep form with lean oil. For reliability, sprinkle it with dry semolina or flour. We shake out the remaining powder by turning the container upside down.

6. Fill out the form. First, pour two-thirds of the dough into it, then, carefully leveling it, put the meat filling on it. Pour with the rest of the dough and put the future pie for half an hour in the oven. We check readiness with a thin wooden hinge - after a puncture, its surface should remain dry.

Cottage cheese mayonnaise pie

Ingredients:

• non-grainy, fresh cottage cheese - half a kilo;

• two glasses of very good flour;

• two tablespoons of fat mayonnaise;

• three eggs;

• 1 gr. vanilla (powder);

• one and a half glasses of sugar;

• soda - 1/2 spoon;

• half a pack of oil or a very good spread.

Cooking method:

1. Sift the flour into a wide bowl, mix it with sugar (half a glass) and soda. On a coarse grater, grate slightly frosted butter or margarine with flour and quickly grind the fat with flour, passing them between the palms of the hands. Add mayonnaise and grind thoroughly and equally intensely again. Divide the resulting small crumbs in half.

2. Cooking the filling. Grind the cottage cheese through a fine metal sieve. Pour the eggs into it, add vanilla and sugar. Mix the curd until smooth.

3. Moisten the bottom and sides of the pan with lean oil so that there are no gaps. Evenly distribute part of the crumbs over it and spoon the curd filling on it. Having leveled the surface, we fill the filling with the remaining crumb.

4. Put the baking sheet in the oven, at an average level, bake for forty minutes. We cut the hot pie into rectangles or squares, and after cooling it we put it on the dish.

Pie on mayonnaise - "Tender Kurnik"

Ingredients:

• homemade fatty mayonnaise - 250 gr.;

• 220 gr. high-quality flour;

• a third of a teaspoon of soda;

• eggs - 3 pcs.

For filling:

• two small potatoes;

• 350 gr. white chicken meat;

• large onion;

• 80 grams of slightly dried "Russian" cheese;

• dill greens.

Additionally

• vegetable oil;

• flaxseed.

Cooking method:

1. Finely chop the onion and put it into the heated oil. Slightly fried and brought to transparency, add the fillet cut into small cubes to the onion. Fry for five minutes, until pieces of chicken noticeably whiten. We shift the chicken on a plate, give time to cool well.

2. In a deep, wide bowl, chop two eggs until smooth. Add mayonnaise, mix and add flour sifted with soda. Add a little salt and, thoroughly stirring, combine the flour mixture with mayonnaise base. We do not leave lumps.

3. We cover the sides and the bottom of a high shape with parchment and pour half of the dough into it, level it.

4. To the cooled chicken, grinding through a coarse grater, add raw potatoes. Flavor everything with pepper and salt a little, mix well. We spread the filling on the dough in an even layer, departing from the edges by at least a centimeter.

5. Grate the cheese with large chips and mix it with chopped dill. We fill in a layer of chicken with a cheese mixture. Pour the rest of the dough on top, level the surface of the future pie.

6. We bake a kurnik at standard 180 degrees. We place the cake only in the oven warmed to the desired temperature. After about half an hour, when the top of the cake is already well set, grease it with whipped yolk, sprinkle with flax seed and put back into the oven. Bake another quarter hour.

Cream cheese mayonnaise pie with sour cream

Ingredients:

• homemade or purchased 9% cottage cheese - 300 grams;

• three eggs;

• two glasses of high-grade flour;

• a glass of fat mayonnaise;

• a spoon of dry quicklime soda;

• 200 grams of unrefined sugar.

In cream

• oily, preferably homemade, sour cream - 250 gr.;

• half a glass of fine sugar;

• 1 gram of vanilla powder.

Cooking method:

1. Put a rare metal sieve on a bowl, put the cottage cheese into it, grind it. If the product is not granular, you can simply mash in a bowl with a pusher.

2. Add mayonnaise to the cottage cheese, beaten eggs, soda, sugar until smooth, and mix everything well. Having received a homogeneous mass, we begin to sprinkle flour. Add no more than half a glass at a time. Pour a new portion when we mix the dough until smooth with the previously added flour. The result should be a dough thick with fat homemade sour cream.

3. Prepare the form. We put vegetable oil on its walls and bottom and sprinkle it with flour or white breading from finely ground crackers.

4. Put the curd dough in the form, carefully level it. Bake by placing on a baking sheet set in the center of the oven, at 180 degrees. Baking time - forty minutes.

5. We leave the finished curd cake for five minutes in the form and only after that we carefully remove it.

6. Cooking cream. Mix, whisking with a mixer, sour cream with sugar. Having achieved the dissolution of sugar grains, add vanilla and once again go through the cream with a mixer.

7. Cut the cooled cake, grease the bottom cake with cream and put the top of the cake on it. We also coat it with cream and let the cake stand for about an hour to soak well.

Mayonnaise Pie: Apple Charlotte Recipe

Ingredients:

• homemade, fatty mayonnaise - 75 gr.;

• 150 gr. flour;

• a glass of fine sugar;

• a spoon of the finished cultivator;

• three eggs;

• six large, preferably sweet and sour apples;

• powdered sugar - 3 tbsp. l .;

• some butter to smear the mold;

• dry semolina for sprinkling.

Cooking method:

1. Beat eggs thoroughly with sugar. Add mayonnaise, mix.

2. Combining the cultivator with flour, sift it twice through a sieve.

3. Little by little, pour flour into the egg-mayonnaise base, each time necessarily bringing the dough to homogeneity.

4. Softened oil cover the walls and bottom of a deep, preferably detachable, form. Sprinkle the oil layer with semolina and be sure to shake out the excess cereal.

5. Peel the apples, cut, remove the core and cut into thin slices.

6. Gently place part of the apples along the bottom of the mold and pour the cooked dough onto them. From above, in a circle, we lay out the remaining apple slices and lightly crush them to slightly immerse in the dough.

7. Bake apple charlotte for about half an hour, until cooked. We put the mold with the future pie in the preheated oven.

8. The cooled cake is removed from the mold, sprinkled with icing sugar.

Sweet mayonnaise pie with jam

Ingredients:

• 2.5 cups flour;

• 200 gr. quality margarine;

• medium-fat mayonnaise - 50 gr.;

• 100 gr. sugar

• a spoon of table vinegar;

• half a glass of thick seedless jam;

• half a spoon of soda;

• 10 gr. vanilla sugar.

Cooking method:

1. Coarsely rub the margarine into a wide bowl. Add mayonnaise, regular and vanilla sugar.

2. Separately, in a small cup, pour soda with vinegar. Pour the foaming mass to the margarine and pour the sifted flour into it. We quickly knead the steep dough, separate from it a third and place it in a bag, remove for 10 minutes in the freezer.

3. The remaining dough is evenly distributed on the bottom of the oiled form. Lubricate with jam or thick jam on top. You can take the jam.

4. Rub a frozen piece of dough through a coarse grater and densely fill it with the surface of the sweet filling.

5. Put the cake on the wire rack placed in the middle of the oven and bake until golden at 190 degrees, about 25 minutes.

Tips for making mayonnaise pies - tips

• It is better to knead a rare dough before preparing the filling, even if it takes half an hour to prepare it. During this time, the baking powder is better activated, and the baked dough will turn out to be more porous and light.

• Try not to use low-calorie mayonnaise. The fat content of the product affects the quality of baking - the higher it is, the softer the pies.

• If during the cut, you notice that the cake is not baked well, put it in the microwave for five minutes. Do not try to bake in the oven, the cake will be spoiled - the dough will dry.

• Before removing the cake from the oven, make sure that it is ready. Pierce in the highest place with a dry wooden skewer. No dough should remain on its surface. Note that if the filling is juicy or consists of fruits, the surface of the stick in any case will not remain dry.
