Sesame buns - basic cooking principles

Sweet sesame buns are made from yeast dough, which is kneaded on water or dairy products. As a flavor, add vanilla or citrus zest. Since the dough is sweet, the first step is to prepare the dough so that it rises well. You can add raisins or dried fruits to sweet buns.

Snack buns are prepared on the same principle as sweet ones, with the only difference being that they put a little sugar in the dough. In the dough for such baking, you can add cheese, sausages and even vegetables.

The dough should rise well. Then it is divided into identical pieces and buns of round or other shape are formed from them. They are laid out on a baking sheet, covering it with parchment.

The baking surface is smeared with a beaten egg and sprinkled with plenty of sesame seeds. Sweet buns can be greased with honey.

Recipe 1. Quick Sesame Bun

Ingredients

4 g dry yeast;

sugar - 20 g;

flour - glass .;

1. Sift the flour through a fine sieve. Combine with the rest of the dry ingredients and mix.

Recipe 2. Buns with sesame seeds and cabbage

Ingredients

white cabbage - 250 g;

sesame seeds - 60 g;

thyme - several branches;

dill and parsley;

egg;

ground pepper;

onion head;

sour cream - 90 g;

refined oil - 50 ml;

sugar - 10 g;

drinking water - 150 ml;

flour - 400 g;

live yeast - 35 g.

Cooking method

1. Put the yeast in a bowl. Add sugar and grind well.

2. Add sour cream, 50 ml of warm water and two tablespoons of flour. Stir and place for 20 minutes in a warm place.

3. Chop the cabbage with a short thin straw and boil in slightly salted water until soft. We recline in a colander and cool.

4. The peeled onion head is finely chopped and fry in refined oil until it is transparent.

5. Slightly outgrow the cabbage and put it in a pan with onions. Season with pepper and salt. Stew over moderate heat for about five minutes and cool.

6. Combine chilled cabbage with dough. Drive in the egg and pour in the remaining water. Finely chop the greens and add to the dough.

7. Slightly pouring flour, knead the soft fluffy dough and leave to approach for two hours.

Ingredients

warm water - 300 ml;

dry yeast - 8 g;

flour - 300 g;

vegetable oil - 100 ml;

granulated sugar - 60 g;

sesame seed.

Cooking method

1. Sift the flour into a deep container, add the remaining dry ingredients and mix. We put together a slide and make a small depression in it.

2. Pour warm water and vegetable oil into a thin stream. Knead not too cool dough. It's okay if it sticks slightly to your hands. We put the dough in a plastic bag and put away for forty minutes in the heat.

3. When the dough is doubled, put it in a bowl and cover with a towel. Leave for another forty minutes in a warm place.

4. We knead the dough, divide it into small equal parts and form buns. Spread on oiled deco. Shake the egg and grease the surface of the buns with it. Sprinkle abundantly with sesame seeds. After half an hour, we send it to the oven and bake at 180 C for 30 minutes.

Recipe 4. Sesame and Cheese Buns

Ingredients

hard cheese - 300 g;

vegetable oil - 200 ml;

Cooking method

1. Sift the flour into a deep container. Grind the cheese into large chips and add to the flour. Mix. Salt and pour the vegetable oil. Mix.

2. We grow yeast in warm milk, add sugar. As soon as the mixture begins to foam, pour it into a bowl of flour. Knead a soft, homogeneous dough.

3. Cover the dough with a towel or cling film and leave it warm for an hour.

4. We knead the rising dough and divide it into small pieces of the same size. We form round buns and spread them at a short distance from each other on an oiled baking sheet.

5. Lubricate the baking surface with a beaten egg and sprinkle it with plenty of sesame seeds. Leave for two hours. We put the suitable buns for 20 minutes in the oven and bake at 200 C.

Recipe 5. Puff pastry buns with sesame seeds.

Ingredients

200 g margarine;

sesame;

salt;

2.5 stack white flour;

egg;

stack cold water.

Cooking method

1. Pour half a glass of sifted flour into the container. Add soft margarine and rub in the crumbs with your hands.

2. Pour two glasses of flour into a separate bowl, add salt. Beat the egg with water until smooth with a whisk. Knead a thick dough. We roll it into a square, three centimeters thick.

3. In the center of the square, we put a blank of margarine, crush it, forming a cake. We turn the dough in the form of an envelope and put it in the refrigerator for half an hour.

4. We take out the dough, roll it into a layer, fold it in half and repeat the procedure. You can fold the dough several times. Roll out into a layer four centimeters thick and cut it into squares. Lubricate them with a beaten egg and sprinkle abundantly with sesame seeds.

5. Put the square buns on a baking sheet covered with baking paper and bake at 150 C for 25 minutes.

Recipe 6. Turkish buns with sesame seeds and feta cheese

Ingredients

Dough

kefir or sour cream - a glass .;

white flour - 3.5 cups .;

vegetable oil - ? glass .;

baking powder - 10 g;

Margarine - 100 g.

Filling

feta cheese - 200 g;

sesame seed.

Cooking method

1. Combine sour cream or kefir with vegetable oil, add baking powder and shake slightly.
