The type of dough for pies and the method of its preparation depends only on personal preferences and free time. You can cook a traditional yeast dough or confine yourself to a lazy recipe. Even simpler is to buy ready-made dough, although this is not always a tasty option.

General principles for the preparation of minced meat:

• Fig. Raw cereals are always boiled and never laid. The variety and type of rice do not matter. You can even use a chop.

• Bow. For pies, green onions or onions are used. Feathers are cut and always added fresh. Onions can be put in raw form, but more often they passer in oil.

• Eggs. More often added in boiled and crushed form. But sometimes a raw egg is put in the minced meat, which connects all the components and prevents the filling from crumbling.

Recipe 1: Fried Rice and Onion Pies

The recipe for the simplest pies with rice and onion from yeast dough. If you do not add an egg during the batch and use vegetable oil for the filling, then they will be suitable for fasting.

Ingredients

• one egg;

• 4 tablespoons of oil;

• 10 grams of yeast;

• 500 ml of water;

• 2 tablespoons of sugar;

• 0.3 tablespoons of salt;

• 4-5 st. flour.

Filling:

• 0.2 kg of rice;

• 0.2 kg of onions;

• 60 grams of butter;

• seasoning.

Cooking

1. We do the dough first, since it needs to stand in heat for at least 2 hours. We cultivate yeast in water with sugar and salt, add the egg and flour with butter. We send for lifting in a warm place, after an hour it is advisable to slightly mass.

2. Rinse the rice and cook until tender, pour out the liquid.

3. Fry the onion with butter, at the end add boiled rice and spices, mix and cool.

4. Divide the dough into pieces of 100 grams and round. Let them lie down for five minutes, then flatten them into cakes.

5. Put the filling in the pastry on one full spoon, pinch the edges.

6. When laying in hot oil, flatten the product in the palms of your hands.

7. Fry the pies on both sides and immediately serve.

Recipe 2: Pies with rice and green onions from cottage cheese dough (in the oven)

A variant of the most delicious baked rice pies with green onions. For the test you will need cottage cheese of medium humidity and absolutely any fat content.

Ingredients

• a spoonful of sugar;

• 2 cups of flour;

• 1 bag of baking powder;

• 0.25 kg of cottage cheese;

• 120 grams of oil drain;

• 120 grams of rice;

• 6 eggs;

• 1 bunch of onions.

Cooking

1. Rice immediately set to boil, as the dough is cooked quickly and does not require long rest.

2. Also boil 3 eggs.

3. Grind the cottage cheese with the two remaining eggs, add sugar with a pinch of salt, 100 grams of melted butter and flour, previously sifted with a cultivator. Making a cool dough.

4. For the filling, mix the boiled rice with peeled and chopped eggs, put the chopped feathers of green onions and spices, add the remaining butter and stir.

5. Form cakes from the curd dough and transfer to a greased or laid baking sheet.

6. Beat the remaining egg and grease the pies. You can use only the yolk, the color will be brighter. Bake at 200 to a ruddy color.

Recipe 3: Pies with rice, egg and onions in a pan

A variant of fried pies with rice, egg and onions in a pan. The dough for them is prepared in milk, but can be diluted a little with water.

Ingredients

• 1 sachet of yeast;

• 100 grams of dry rice;

• 80 grams of butter for the test;

• 2 tablespoons of sugar;

• 0.7 kg of flour;

• 6 eggs;

• 400 ml of milk;

• 1 bunch of green onions;

• salt, fat for frying.

Cooking

1. We warm milk, it should become pleasantly warm. Pour sugar, two glasses of flour with dry yeast mixed in it. We put the dough for half an hour in the heat. Then add melted butter, salt, one egg and bring to the desired density with flour. We leave to wander for another hour and a half.

2. Cook rice, cool, drain all the liquid.

3. Eggs are also boiled, cut into cubes and sent to rice.

4. Add chopped green onions and spices to the filling, stir. If you want to make the filling more juicy, then you can season the rice with a spoon of sour cream or pour a little melted butter.

5. Divide the dough into small but identical pieces. We form ordinary stuffed pies from them.

6. We fry products on both sides in oil and you can please the household!

Recipe 4: Pies with Rice, Onion and Mushrooms

A variant of wonderful pies with rice, onions and pickled mushrooms. They can be fried or baked. For cooking in the oven, the dough can be made a little cooler.

Ingredients

• 250 ml of water;

• 2 tsp yeast

• 4 cups flour;

• 0.1 kg of margarine;

• 2 eggs;

• salt, sugar;

• 0.15 kg of rice;

• butter;

• 0.15 kg of mushrooms;

• 2 onion heads.

Cooking

1. We combine water with dry yeast, the liquid should be warm. We put a tablespoon of sugar and a teaspoon without a slide of salt. Then pour the melted margarine, add the egg and knead the dough with flour. We remove it into the heat and forget about it for an hour, then we crumple and wait another hour.

2. Cook rice, cool, drain all the liquid.

3. Cut the onion heads and fry with oil, send to rice.

4. We also cut mushrooms, preferably finely, so that the filling is evenly salted. We send them to rice with onions, bring spices to the desired taste and break one egg, the mince is ready! It remains to mix it thoroughly.

5. From well-risen dough and minced meat with mushrooms, we make ordinary pies.

6. Fry until tender in oil.

7. Or we shift it onto a baking sheet, let it come half an hour, grease it with yolk and bake at 200 degrees until it turns golden.

Recipe 5: Puff pastry with rice and green onion

A variant of the simple pies with rice and green onions. Still would! For them, you don’t even need to knead the dough. We will bake the formed products in the oven.

Ingredients

• pack of dough;

• 0.2 kg of rice;

• salt;

• 3 eggs;

• butter;

• a bunch of onions and any spices.

Cooking

1. Boil rice, mix with two boiled eggs, chopped finely. Add a spoonful of oil and chopped onion, minced meat is seasoned with salt and seasonings.

2. Roll puff pastry into a thin layer, cut into squares.

3. Beat the egg and completely lubricate the entire layer.

4. Put the filling on the center of each square and sculpt the envelopes. Do it quickly until the egg is dry. Otherwise, the edges need to be greased. The egg will provide a firm grip and will not let the pasties stick out in the oven.

5. We transfer products to a baking sheet. If the dough is yeast, then let the pies rise for about thirty minutes.

6. If the dough is without yeast, then immediately grease the remaining eggs and bake the pies until cooked. The temperature in the oven is 200.

Recipe 6: Pies with Rice, Egg and Onion from Quick Dough

A variant of quick pies with onions, rice and an egg from kefir dough. He does not need to stand and bite for a long time, you can sculpt products immediately after kneading. Therefore, we prepare the filling first.

Ingredients

• 250 ml of kefir;

• 1 tablespoon of sugar;

• 0.5 tsp of salt;

• 2 eggs;

• 2 tablespoons of oil;

• 1 tsp soda;

• 3.5 tbsp. flour.

Filling:

• 0.15 kg of rice;

• 4 eggs;

• spices;

• 2 bunches of green onions.

Cooking

1. Boil the rice until cooked, cool.

2. Cook the eggs and cut into cubes, transfer to rice.

3. Add chopped onions and spices to the minced meat, stir.

4. For the test in kefir, we extinguish the baking soda, put salt and sugar, then we throw the eggs, pour in the butter and add the flour. All ingredients must be thoroughly mixed each time, otherwise it will be difficult to do later.

5. We make pies with rice filling from the dough.

6. Heat the oil in a pan and fry the formed products.

Recipe 7: Pies with Rice, Onion and Sausage

A variant of delicious cakes with hearty filling, which is made with any sausage. You can take boiled, smoked sausage, products with bacon or without it. Tasty with sausages or sausages. Even liverwurst sausage can be added here. The dough is prepared any yeast in milk or water.

Ingredients

A feature of these pies with rice and green onions is the addition of canned fish. You can use fish in oil or in your own juice. For such a filling, any yeast dough, including puff pastry, is suitable.

Ingredients

• 0.18 kg of rice;

• 50 grams of green onions;

• 1 can of canned fish;

• spices;

• 0.8-1 kg of dough;

• butter for frying pies.

Cooking

1. The washed rice is cooked until tender, but we try to keep the grains whole and dense. We recline in a colander to glass all the liquid.

2. Open a jar of fish, remove the pieces and remove the spinal bones, if they are large and hard. Knead the rest. Oil or marinade does not need to be drained anywhere, rice absorbs it.

3. Combine the fish with the cooled rice, stir and put the green onions. Add salt and pepper to taste.

4. From the dough we make pies, immediately fry.

Pies with rice and onions - useful tips and tricks

• If onions are added to the filling for pies, then it is better to fry them in butter. You can use melted. It will turn out much tastier.

• Delicious pies only fresh. If it turned out to cook much more than necessary, then it is better to freeze immediately. To do this, the pies are cooled, placed in an airtight bag and sent to the freezer. At the right time, it remains only to heat the frozen product in the microwave, freeing it from the bag.

• If you use butter, not flour, to cut the dough, then when frying in the room there will be much less burning, the fat will be transparent and nothing will stick to the finished product.

• To prevent rice from boiling and the grains to retain their shape, cook it for 2 minutes less than indicated on the package.
