Dumplings with onions - general principles of preparation

The dough for dumplings used ordinary unleavened. It can be prepared in water, milk, whey, or a mixture of these ingredients. Sometimes an egg or oil is added. Flour is mainly used wheat. The dough can be made in the usual way or choux.

For the filling, you can use onions or green onions. It all depends on the recipe. If necessary, onions are fried or poured with boiling water.

What else is added to onion forcemeat:

• cottage cheese;

• potatoes;

• fat;

• eggs;

• mushrooms;

• meat products.

The ingredients may be raw or pre-processed. The addition of various spices, herbs, aromatic seasonings to the filling is welcome.

Dumplings are most often sculpted manually or using a special device. Product size can be any. But you need to remember that large dumplings will boil for a long time and can boil. For the same reason, you do not need to throw many products into the pan at once.

Recipe 1: Dumplings with cottage cheese and green onions

One of the most delicious options for dumplings with cottage cheese and green onions. The dish is very tasty, insanely aromatic and has a lot of fans.

Ingredients

• 1 glass of water;

• 450 grams of flour;

• 2 tablespoons of vegetable oil;

• 2-3 tablespoons butter;

2. The filling is prepared very quickly. Grind cottage cheese with egg and salt, add chopped onion. It can be put and more than indicated in the recipe. Done! If the cottage cheese is suddenly dry, then you can add another egg or a spoonful of sour cream so that the filling does not crumble.

3. We take out the dough, put the stuffing and sculpted dumplings next to it.

4. Cook for a minute after boiling, take out with a slotted spoon and generously grease with butter.

Recipe 2: Dumplings with Onion and Egg

The recipe for Ukrainian dumplings with onions and eggs, which differ in a very juicy and aromatic filling. Wonderful taste of minced meat gives milk sauce.

Ingredients

• 200 ml of water;

• 0.5 kg of flour;

• 1 egg;

• salt.

For filling:

• 0.5 kg of onions;

• 3 eggs;

• 100 ml of oil;

• 1 spoon of flour;

• 100 ml of milk;

• spices.

Cooking

1. Mixed ordinary fresh dough from the above ingredients. Add a pinch of salt. We remove the dough to lie down in the bag while we are doing the stuffing.

2. Eggs are simply boiled, then cut into cubes.

3. Onions, too, cut into cubes and fry in a pan with prescription oil, leaving a spoon for the sauce.

4. In another skillet, heat the remaining oil and fry a spoonful of flour, add milk and heat the sauce until thickened.

5. Transfer the sauce to the fried onions, add spices and turn off. Cool and lay eggs. The filling is ready.

6. The dough should be well-laid by this time. We get it and form ordinary dumplings in the form of crescents.

7. Boil for two minutes after surfacing in boiling and salted water. If the onion is fried poorly, and it crunches a little, then you can increase the cooking time.

8. Such dumplings with sour cream are served, fried onions are not offered to them.

Recipe 3: Traditional Dumplings with Potatoes and Onions

The recipe for all known dumplings with potatoes and onions, which many housewives love and make. We’ll make choux dough for them.

Ingredients

• egg;

• salt;

• 2 tablespoons of oil;

• 1 cup boiling water;

• 3 cups flour.

• 0.7 kg of potatoes;

5. Enter the rest of the flour and egg, stir it by hand already, since the mass will no longer be hot. Leave the dough to cool completely and let lie for about 15 minutes.

6. We make ordinary dumplings with potatoes, boil for 2-3 minutes.

Recipe 4: Cheese Dumplings with Cottage Cheese and Green Onion

The recipe for very interesting dumplings with cottage cheese and green onions. For a special taste, cheese is added to them. According to the recipe, Russian cheese is used. But this is not the rule and you can even take processed cheese in foil. Cook the dough in milk.

Ingredients

• half a pound of cottage cheese;

• 0.15 kg of cheese;

• 50 grams of green onions;

• salt;

• flour;

• 200 ml of milk;

• eggs 3 pieces.

Cooking

1. Mix the egg with a small pinch of salt, pour in water and prescription milk. At the end, pour the flour and make an ordinary dough. Flour will take about half a kilogram.

2. Mix the cottage cheese with grated cheese and salt, add the remaining eggs to the filling and rub everything well. Lumps should not be. If the cottage cheese is dry enough, then it is better to grind it in advance, before combining with the rest of the ingredients.

3. We make ordinary dumplings, cook for a minute after active boiling and take out. Grease with butter, you can sprinkle with grated cheese and dill.

Recipe 5: Aromatic Dumplings with Onions and Mushrooms

For fragrant dumplings with onions, we will use ordinary champignons. If desired, you can take any mushrooms. But when using forest mushrooms, they must first be boiled in salt water. We prepare any dough based on a glass of liquid.

Ingredients

• 4 onion heads;

• 0.4 kg of champignons;

• 50 ml of oil;

• 0.5 bunch of dill;

• clove of garlic.

Cooking

1. Rinse mushrooms, if necessary, remove damage. If the gills of the mushrooms are dark, then cut off.

2. Cut the mushrooms into cubes. Spread in a pan with butter. We simmer for 10 minutes under the lid in our juice, then open and evaporate all the liquid.

3. As soon as there is no moisture in the pan, you can add onion, chopped into small cubes, and fry until tender.

4. Minced meat, turn off and cool.

5. Add dill with garlic and you can make dumplings.

6. Products with mushrooms are cooked for only 3 minutes after boiling, since the filling is already ready for use. Serve mushroom dumplings with different sauces, herbs or just sour cream.

Recipe 6: Dumplings with Raw Potatoes and Onions

For dumplings with potatoes and onions, this recipe does not need to be mashed in advance. The root crop is laid in its raw form, which makes the dish unusual, but very tasty.

Ingredients

• 4 potatoes;

• 3 onions;

• 2 cups of flour;

• 0.5 cups of milk;

• 1 egg;

• 50 ml of water;

• 2 onion heads;

• 0.6 kg of potatoes;

• 0.15 kg of fat;

• spices;

• any dough.

Cooking

1. Fry diced bacon. But not very, very little. We take out the pieces in a bowl, we leave the melted fat.

2. After the bacon, fry the chopped onion heads in the same pan.

3. Cook the mashed potatoes, knead and add lard with onions, try on salt. Season with spices and cool.

4. Form dumplings with potato filling.

Dumplings with onions - useful tips and tricks

• If the onion is bitter, you can pre-beat it with boiling water or fry a little in a pan.

• Green onions will give the filling more taste and aroma if, after slicing, grind it with a pinch of salt until juice appears.

• Any stuffing for dumplings will be tastier if you add fat to it. Most often put butter, but you can also use lard.

• If you plan to fry or bake dumplings after boiling, then do not bring them to full readiness. It is necessary to preserve the shape of the products as much as possible and not allow them to boil.
