Tiramisu - general principles and methods of preparation

Italian cuisine, of course, is one of the best and trendiest cuisines in the world today. And this is not surprising! After all, it is distinguished by such a variety of products: meat, seafood, vegetables, fruits, cheese, rice, the famous "pasta" and, of course, delicious desserts.

The culprit of the "triumph" of this article will be the unsurpassed Italian delicacy called Tiramisu - a multi-layer dessert, which traditionally includes: mascarpone cheese, sugar, eggs, expresso coffee, Marsala wine and savoyardi. However, the situation is such that some ingredients are not always available on the shelves of our stores, so they can be replaced. But more on that later.

Tiramisu is loved by all of Italy! No wonder the basis of its name includes three Italian words: tira mi sous, which literally means "lift me up." According to the first version, tiramisu received this name because of its high calorie content. Most people are inclined to believe that the Italians invested in their characteristic expressiveness, and this translation should be interpreted as "raise my spirits, give me joy."

It makes no sense to explain what tiramisu is, and even more so to compare it with a delicate souffle or cake. You should definitely try it. But how to do it? After all, not everyone can afford to go to Italy to taste exquisite food.

Although in our time this delicacy is widely known throughout the world, a real tiramisu can be tasted only in Italy. Many restaurants will offer you a similar dessert, cut into portions, but this is not a genuine tiramisu, but its analogue. The thing is that the basis of a gentle dessert is mascarpone cheese. A rare variety, of course, can be obtained if desired, but you yourself understand that its freshness will be far from ideal. And to make a real tiramisu, it is fresh mascarpone that is required.

The next, no less important ingredient of tiramisu - savoyardi - air cookies, cooked according to a unique old recipe from flour, protein and sugar.

Tiramisu - food preparation

So, as we already understood, preparing a classic tiramisu at home is not so simple. If it is not possible to visit the homeland of dessert, let those comforting options for preparing Italian sweets that successful chefs and loving housewives, periodically pampering their family with this gentle multi-layer creation, console you.

In our country, just like the others, the cheeses replace mascarpone cheese with fat, always fresh cottage cheese, cream, sour cream or cheese such as Buko, Philadelphia, Marsala wine - Madeira, Amaretto, Brandy or high-quality cognac, and savoyardi - sponge cakes. Many chefs powder tiramisu on top with cocoa powder. In addition, make sure that chicken eggs, coffee (preferably expresso) and sugar are available.

Tiramisu - the best recipes

Recipe 1: Classic Tiramisu

The result is the dessert option closest to Italian cuisine. The dish is not baked in the oven, but simply cooled in the cold. Even those who are far from cooking will be able to pamper their friends with this pastry masterpiece prepared according to this recipe.

Ingredients:

- 75 gr. Sahara
- three egg yolks
- 250 gr. tender cheese, cottage cheese or sour cream
- three teaspoons of instant coffee
- 120 g stick biscuit cookies
- one table. l cocoa powder
- four tbsp. tablespoons brandy or amaretto

Cooking method:

1. Pour coffee with a glass of boiling water. Cool, pour into a deep bowl and add liquor or brandy to the resulting drink.

2. Whisk the yolks thoroughly with sugar (powder) until it is completely dissolved. Sour cream, cottage cheese or mascarpone are gradually introduced into the egg mass, stirring constantly. Beat until a thick, homogeneous mass is formed.

3. Dip half the biscuits in the coffee mixture and quickly spread them close to each other. Lubricate on all sides with egg-sour cream (curd, cheese, etc.) mixture.

4. We do the same with the second half of biscuits, imposing on the first part of the dessert. Cover the tiramisu with the remaining egg-sour cream. We level the remains on top.

Next, cover the dessert with cling film and put in the refrigerator for at least four to five hours. After that, sprinkle it with cocoa powder and serve.

Recipe 2: Tiramisu from Julia Vysotskaya

The principle of preparation of this recipe is similar to the previous one. However, instead of Amaretto, we will add cognac and during the cooking process we will add the cream cake with whipped egg whites, which are previously kept in the refrigerator.

Ingredients:

- creamy mascarpone 400 gr.
- 300 gr. Lady's fingers cookies
- five eggs
- half a glass of powdered sugar
- medium cup of strong coffee
- a couple of spoons (tablespoons) of cognac
- cocoa powder

Cooking method:

1. Beat the egg yolks with powdered sugar until a light yellow creamy mass is formed. Add the mascarpone and mix everything thoroughly so that there are no lumps.

2. We take out the proteins from the refrigerator, beat in the foam and supplement them with the yolk mass. We mix everything.

3. We brew strong coffee, cool slightly and add cognac to it. Soaked with the resulting drink "Lady's fingers."

4. Next, put one layer of soaked “fingers” into the mold, fill them with cream, then again lay out the cookie layer and fill it with cream again. We remove the cake in the cold and insist for at least four to five hours, after which we take out and sprinkle cocoa.

Recipe 3: Tiramisu with Pineapple

The tiramisu prepared according to this recipe turns out to be unusually tasty. Air souffle in combination with pineapples will give a wonderful mood, truly "lift up." Be prepared for the fact that the guests will literally “fill up” you with compliments and will demand to discover the secret of making a wonderful dessert. But isn't every woman dreaming about it?

Ingredients:

- 500 gr. mascarpone
- four eggs (chicken)
- four tbsp. powdered sugar
- Savoyardi or "ladies' fingers"
- a can of pineapple canned
- a glass of liqueur "Maraschino"
- cocoa powder

Cooking method:

1. Pour juice from pineapples into a bowl (but do not pour, as we will need it later). Pineapples cut and squeeze the juice out of them, as best as possible.

2. Separate the yolks from the proteins. Beat the yolks with powder, and the whites (separately) with a pinch of salt.

3. Prepare a cream of cheese, whipped proteins and yolks (traditionally). After that, add squeezed pineapples to the creamy mass. We mix everything.

4. Pineapple juice mixed with "Maraschino" and dip cookies in a drink. Next, put it in a layer on a rectangular shape, fill it with cream. Repeat the procedure again. Finish the layer with cream.

We remove the dessert in the cold for several hours, after which we sprinkle cocoa and serve to the table, cut into portions. Enjoy your meal!

Tiramisu - tips from experienced chefs

Tiramisu is a wholly Italian delicacy that is traditionally made from mascarpone, savoyardi, Marsala and coffee. However, if desired, you can supplement the air cake with slices of fruit (especially delicious with strawberries), crushed nuts, raisins, etc. Instead of cocoa powder, grated dark chocolate can be used for sprinkling.

Children are strictly forbidden to drink strong coffee and alcoholic beverages of any strength, therefore, when making tiramisu for a family where there is a child, be sure to consider this. In this case, coffee is recommended to be replaced with natural juices.

And the last tip: when slicing tiramisu into portioned slices, do not forget to moisten the knife each time in hot water so as not to damage the structure of the souffle and preserve the presentable appearance of the dessert.
